QUICK AND EASY RAISIN LOAF

Deliciously sweet and slightly sticky, this loaf topped with whipped cream 
makes a luscious dessert or teatime treat. The original recipe was made with 
sultanas, a type of dried grape larger than a raisin. Use them if they're 
available.

1 lb raisins or golden raisins (sultanas)
1 cup all-purpose flour
3/4 cup firmly packed brown sugar
1/2 cup (1 stick) butter, melted
2 large eggs, lightly beaten
1/4 cup sweet sherry
2 tablespoons orange marmalade
1 teaspoon baking powder
1/4 teaspoon salt

Preheat the oven to 300°F. . Butter a 9 x 5­ inch loaf pan. Line with waxed 
paper .. Beat the raisins, flour, brown sugar, butter, eggs, sherry, 
marmalade, baking powder, and salt in a large bowl with an electric mixer at 
low speed until well blended .. Spoon the batter into the prepared pan .. 
Bake for 75-85 minutes, or until a toothpick inserted into the center comes 
out clean .. Cool the cake in the pan for 15 minutes. Turn out onto a rack 
to cool completely.
