Mini Applesauce Fruitcakes 1 1/2 cups applesauce 1/2 cup shortening 1 cup sugar 1/2 pound dates, pitted and chopped 1/2 pound golden or dark raisins 1/4 cup currants (optional) 1/2 pound nuts, coarsely chopped 1/8 pound candied cherries, quartered 1/8 pound candied pineapple, chopped 1/8 pound citron, finely chopped 2 1/4 cups sifted flour 2 teaspoons baking soda 1/2 teaspoon nutmeg 1 1/4 teaspoons cinnamon 1/4 teaspoon ground cloves 1/2 teaspoon salt
In saucepan, combine applesauc shortening and sugar. Boil for 5 minutes, stirring occasionally. Cool. Preheat oven to 250 degrees. Grease 3 miniature loaf pans. Combine dates, raisins, currants, nuts, cherries, pineapple and citron 3-quart mixing bowl. Sift together flour, baking soda, nutmeg, cinnamon, cloves and salt. Add to date mixture, coating fruit and nuts. Stir in appleĀ sauce mixture. Spoon batter into prepared pans. Bake for 2 hours, or until done, coverĀ ing with brown paper when loaves are browned as desired. Remove from pans. Cool on a wire rack. Serves 9 to 10.
