Mini Applesauce Fruitcakes

1 1/2 cups applesauce
1/2 cup shortening
1 cup sugar
1/2 pound dates, pitted and
chopped
1/2 pound golden or dark raisins
1/4 cup currants (optional)
1/2 pound nuts, coarsely chopped
1/8 pound candied cherries, quartered
1/8 pound candied pineapple, chopped
1/8 pound citron, finely chopped
2 1/4 cups sifted flour
2 teaspoons baking soda
1/2 teaspoon nutmeg
1 1/4 teaspoons cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt

In saucepan, combine applesauc shortening and sugar. Boil for 5 minutes, 
stirring occasionally. Cool.

Preheat oven to 250 degrees.

Grease 3 miniature loaf pans.

Combine dates, raisins, currants, nuts, cherries, pineapple and citron 
3-quart mixing bowl. Sift together flour, baking soda, nutmeg, cinnamon,
cloves and salt. Add to date mixture, coating fruit and nuts. Stir in appleĀ­ 
sauce mixture.

Spoon batter into prepared pans.

Bake for 2 hours, or until done, coverĀ­ ing with brown paper when loaves are 
browned as desired. Remove from pans. Cool on a wire rack. Serves 9 to 10.
