Coconut Black Walnut Pound Cake

Cake
2 cups sugar
1 cup oil
4 eggs, beaten
3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup buttermilk
1 cup chopped black walnuts
1 cup flaked coconut
2 teaspoons coconut extract

Coconut Syrup
1 cup sugar
1/2 cup water
2 tablespoons butter or margarine
1 teaspoon coconut extract

Preheat oven to 325 degrees.

Grease and flour 10-inch tube pan.

For cake, combine sugar, oil and eggs. Beat well. Combine flour, salt, 
baking soda and baking powder. Add to­ wet ingredients alternately with 
butter­ milk, beating well after each addition. Stir in black walnuts, 
coconut and coconut extract. Pour into prepared pan. Bake for 65 minutes, or 
until done.

For syrup, combine sugar, water and butter in saucepan. Bring to a boil. 
Boil for 5 minutes. Remove from heat. Stir in coconut extract. Makes 3/4 
cup.

Pour hot syrup over hot cake. Let stand in pan for 4 hours to absorb syrup. 
Wrap well. (Cake will be very moist.) Serves 12 to 16.
