Dough:
1 c. flour
1 egg
2/3 c. cold butter, cut into bits
1 T sugar
salt

Filling:
3 ½ T raisins
2 T rum
2 ¼ lbs apples
juice and some zest of a lemon
1 T sugar
½ tsp cinnamon
3 ½ T slivered almonds

Frosting:
3 eggs
3 T sugar
2 T flour
7 oz heavy cream

Flour for the work surface, butter for the pan, powdered sugar for decoration

For the dough: Knead together flour, egg, butter bits, sugar, and a pinch of 
salt. Shape dough into a ball, wrap in plastic wrap, and chill 1 hour.

In the meantime, make the filling: Pour rum over raisins. Peel apples, cut into 
quarters, core, and cut in small, thin slices. In a bowl, combine lemon juice, 
zest, sugar, cinnamon.

Thoroughly knead dough once more on a floured work surface and roll out 
lightly. Line a springform pan, including the sides, with the dough. Pierce 
bottom several times with a fork. Distribute apple mix and raisins evenly over 
the dough and sprinkle with slivered almonds. For the frosting: Combine eggs, 
sugar, flour and cream, and stir until smooth, and slowly pour onto filling. 
Bake in an oven at 400F for 45 min. Remove from oven and let cool 10 minutes. 
Dust with a thick coating of powdered sugar, remove from pan, and serve.
