West Rhubarb Cake
Cream together:
1/2 cup butter
1 1/2 cups brown sugar
Add:
2 cups flour
1 egg
1 tsp vanilla
1 tsp soda
1 cup sour milk (or buttermilk, or 1 cup milk with 1/2 tsp vinegar)
Stir in:
2 cups rhubarb, cut into small pieces
Top with:
1/2 cup sugar
1 T cinnamon
Bake 350F for 40 minutes in a greased 9 x 13 pan.
