ZULEIKA CAKE

Makes 10 - 12 pieces
 
Sponge cake layer::

2/3 cup scalded, peeled almonds
scant 1 cup sugar
6 egg whites
 
Creme:

6 egg yolks
1 1/4 cups heavy cream
2/3 cup sugar
1/3 cup butter or margarine
 
Decoration:

Toasted flaked almonds
 
Heat the oven to 400F. 

Grind the almonds and mix them 
with sugar.

Beat the egg whites until stiff 
and fold them into the almond 
mixture. 

Pour in a greased, floured baking 
dish, preferably a springform pan, 
with a diameter of about 11". 

Bake for 18 - 20 minutes in the 
lowest part of the oven.
 
Mix all ingredients for the creme 
in a saucepan. 

Let simmer slowly on low heat 
until it thickens. 

Let cool and spread it on the cake. 

Sprinkle with flaked almonds. 

Leave in a cold place until serving, 
preferably the next day 

Serve with a fruit salad with fresh 
strawberries, pineapple chunks and
sliced kiwi fruit.
