I have made many wedding
cakes and one of my
teachers taught me to
wait 10 minutes after
removing a baked item
from the oven (if it's
a cake, loosen it from
the edge of the pan
with a spatula) then
cover it with saran
wrap until it is cooled
down.

My cakes have always
been moist doing this.

You also may be baking
your cupcakes too long.

I hope this helps.

Hello,

my name is Marsha and
I've just started making
cupcakes.

My problem is, my cakes
seem dried out when
I make homemade batter.

So I think its either I
baked them too long, or
I did something in the
combining process.

any ideas ?.

Marsha from TX
