Kentucky Pecan Cake Recipe 
 
Ingredients
2 1/2 c. Self Rising Flour 
2 c. Sugar 
1 1/2 c. Vegetable Oil 
1 c. Applesauce 
2 1/2 tsp Grnd Cinnamon 
 2 tsp Warm Water 
4 x Egg Yolks 
1 c. Minced Pecans 
4 x Egg Whites 
1 x Powdered Sugar 
 

Directions
Combine first 7 ingredients in order listed; beat at medium speed of mixer till 
smooth. Stir in minced pecans. Beat egg whites (at room temperature) till 
stiff; fold into batter. Pour mix into an ungreased 10-inch tube pan. Bake at 
350" for 1 hour and 30 min. Invert pan, and cold cake completely; remove from 
pan. Sprinkle top of cake with powdered sugar.
