Chocolate Cream Frosting

Yield: Makes about 3 1/2 cups
RECIPE INGREDIENTS
1 pound semisweet or bittersweet chocolate, finely chopped
1 1/2 cups (3 sticks) unsalted butter, room temperature

2 tablespoons light corn syrup
1 tablespoon pure vanilla extract
5 cups powdered sugar, sifted
DIRECTIONS
Melt chocolate in top of double boiler over barely simmering water, stirring
often with rubber spatula until smooth. Cool to lukewarm.
Using electric stand mixer and flat beater attachment, beat butter until
fluffy, about 2 minutes. Beat in corn syrup and vanilla. Add chocolate and
blend well on low speed. Gradually add powdered sugar, beating until well
blended. If frosting is too stiff, beat in 1 tablespoon water.
