New York Style Cheesecake
Makes 2 cakes
54 ounces Cream cheese, softened (3 lb. 6 oz.)
2 ounces Cake flour
18 ounces Granulated sugar
8 Eggs
5 fluid ounces Heavy cream
1/2 fluid ounce Vanilla extract
1. Beat the cheese until smooth. Beat in the flour and sugar.2. Blend in the
eggs slowly, then add the cream and vanilla.3. Pour the batter into
well-buttered springform pans. Bake at 300°F (150°C) until set, approximately 1
to 1 1/2 hours.4. Cool completely before removing the sides of the pan.5.
Yield: 2 Cakes, 10 In. Each
