NO CHOLESTEROL FRUITCAKE
2 c. applesauce
2/3 c. corn oil margarine
1 c. brown sugar
1/3 c. white sugar
2 3/4 c. flour
2 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1 1/4 c. raisins
1 (16 oz.) container mixed fruit
1 c. walnuts or pecans, coarsely chopped
1. Combine applesauce, margarine and sugars in a pot and boil for 5 minutes.
2. Chill until lukewarm. 3. Sift flour, soda and spices together in a large
bowl. 3. Add raisins, fruits and nuts to dry ingredients - mix. 4. Add the
cooled applesauce mixture and combine well. 5. Pour into two greased and floured
loaf pans. 6. Bake at 375 degrees for 1 1/2 hours.
