Homemade Mashed Potato Cake (Amish)

This is a really interesting recipe that comes to me from an Amish woman
in Holmes County, Ohio! Using up leftover mashed potatoes is not unusual
for an Amish homemaker. The most common way to use them is to simply fry
them up as patties the next day. If there are leftover veggies from
supper the night before, they'll often mix those into the patty and have
sort of an 'everything-in-one' patty. But using leftover mashed potatoes
in a cake?? That's a new one on me. So if you want an inventive way to
use mashed potatoes, give this recipe a try...oh, and if you try it let
us know how it turns out!
MASHED POTATO CAKE
1 cup margarine, softened
2 cups sugar
2 eggs
1 teaspoon vanilla
1 cup cold, leftover mashed potatoes
2 cups flour
1 /4 cup cocoa
1 teaspoon baking soda
1 cup milk
Cream together margarine and sugar. Add eggs, one at a time. Blend in
vanilla and potatoes. Combine flour, cocoa, and soda. Add to creamed
mixture alternately with the milk. Pour into a greased 13 X 9 X 2 inch
pan. Bake at 350 for 35-40 minutes or until done.
