Amish Moist Chocolate Cake

This recipe came to me by way of an Amish woman in the Harmony, 
Minnesota community. One word: YUM!

 From The Amish Cook: Week of April 8, 2013



2 cups flour
4 T cocoa
2 tsp baking soda
1 cup granulated sugar
1 cup mayonnaise
1 cup cold black coffee
1 tsp vanilla


In large mixing bowl, sift dry ingredients. Cream n mayo gradually. Add 
coffee slowly while beating. Add vanilla last. Place in a greased 9 x 13 
pan. Bake at 350 for 20 minutes. Turn the temperature down to 325 for 
the rest of the time, usually 5-10 more minutes. Toothpick inserted in 
the center should come out clean. Add frosting of your choice when the 
cake is cool.
