Iced Christmas Pudding Mousse


FOR THE PUDDING
  a.. 450g Christmas pudding , roughly chopped into small pieces 
  b.. 500g carton ready-made custard 
  c.. 142ml carton double cream 
  d.. 25g caster or icing sugar 
FOR THE ORANGE SAUCE
  a.. 4-6 tangerines or satsumas, peeled 
  b.. 300ml orange juice 
  c.. a splash or two of Grand Marnier or Cointreau (optional) 
  d.. 100g caster sugar 
TO SERVE
  a.. holly sprigs, and icing sugar for dusting
