Malted chocolate fudge slice
a.. 175g self-raising flour
b.. 2 tbsp cocoa powder
c.. 1 tsp baking powder
d.. 1 tsp bicarbonate of soda
e.. 150g golden caster sugar
f.. 4 tbsp ovaltine
g.. 3 tbsp golden syrup
h.. 2 eggs , lightly beaten
i.. 150ml milk
j.. 150ml flavorless oil (groundnut is good)
ICING
a.. 200g dark chocolate , broken into pieces
b.. 25g butter
c.. 180ml double cream
d.. sweets , to decorate
e.. Heat the oven to 160C/fan 140C/gas mark 3. Butter and base line a
deep-sided rectangular tin about 15 x 30cm.
f.. Sift together the flour, cocoa powder, baking powder and bicarbonate of
soda. Add the remaining cake ingredients and beat to a smooth consistency.
Spoon the mixture into the tin and bake for 30 minutes until just firm to touch
and a skewer comes out clean when pushed into the centre. Cool for 10 minutes
before turning out onto a wire rack.
g.. For the icing, melt the chocolate and butter over a pan of simmering
water or in the microwave on low. Stir in the cream until the mixture is smooth
and shiny. Cool for 5-10 minutes then spread over the top of the cake. Decorate
with sweets cut into squares or slices. Store at room temperature to keep the
topping soft.
Know-how
Add a bit of color to your cupcakes by decorating them with turquoise icing and
a sugar crystal or jelly diamond - look in the baking section of your
supermarket.
