Will the server reject that? Will it rewrite the ATTENDEE URN-UID based
on the EMAIL? Will it preserve the UID?

If the uuid value is recognized as a valid user on the server it will re-write the CN= and EMAIL= parameters to match values appropriate for that principal. If the uuid is not recognized the server will not change the property at all.
