I don't know if this is still the case, but
http://trac.calendarserver.org/wiki/iPhone states that an iPhone can't
connect directly to a CalDAV server, but must rather sync with another
instance of iCal on a full OSX install. This seems pretty
odd/daft/pointless/full-of-lock-in-badness to me, but may still be
the case.
well, that would certainly be pretty odd/daft/pointless/full-of-lock-
in-badness if it were true...
(Sadly, even if Apple helps work on an opensource CalDAV server they
are accused of lockin ;-)
any iPhone running iPhone OS 3.x supports CalDAV accounts
on the iPhone, just go to home screen - Settings - Mail, Contacts,
Calendars - Add Account...
then see the screenshots here:

http://gallery.me.com/jjs/100201/IMG_0390
1) choose Other (bottom option)
http://gallery.me.com/jjs/100201/IMG_0389
2) Add CalDav Account (I know, I know, it's not the logical choice,
but trust me...)
http://gallery.me.com/jjs/100201/IMG_0391
3) Very simply enter server, user name/account and password
http://gallery.me.com/jjs/100201/IMG_0388_2
4) The CalDAV account will look like this
Under Advanced Settings, you will see a complicated server url like:
http://<your_server>:8008/principals/users/ical
but you won't need to type that in yourself
