If you look at this file: <http://trac.calendarserver.org/browser/CalendarServer/trunk/twistedcaldav/stdconfig.py> you will see documentation for a number of configuration options, including the one you're looking for, "DSN". If you want to run the database yourself, you need to set "DBType" to "postgres" and "DSN" to ":your-db-username:your-db-password:::", which is the format needed by the pyGreSQL driver. A database just for calendar server should be starting up automatically; the log lines you've pasted aren't quite enough information to go on, but I assume calendarserver can't start up its own postgres because it conflicts in some way with another one that you've installed and run yourself.
