I know you asked for one or two, but it's always hard to pick favorites. My suggestions are Reel to Reel (Cary Ravitz) Uncle Toby's Picnic (the variation with square thru 3 hands; multiple authors) Crow Flight (Rick Mohr) Judah Jig (Charlie Fenton) These are dances with good flow, good connection (hand or eye), and interesting smooth transitions, and they're also fun.
