I noticed that the makefile downloaded and built what looks like most of the Mozilla suite - is all of that needed for Camino or can I prune some of it (such as the mailnews or the calendar directories)?

We pull everything, there's not a simple way to just pull what you want. You can try removing bits (like mailnews), but it hasn't really been tested. That stuff isn't built for camino, at least the build process itself is much more configurable. I guess the thought was disk (and network) is cheap, why not pull it?

Also, is there a particular part of the code that anyone could recommend for a noob to get started with?

You'd find yourself most comfortable (as a mac cocoa programmer) in mozilla/camino. That's where the code for the UI and surrounding application lives.
