Well, someone has already done something! Rheinhold Penner's CaminoKnight not only downloads and installs nightlies, but also has a capability to replace specific resources inside the application bundle. Plus add new icons originally from CaminIcon.
Yes, the right way is a GUI and the data should be stored in Application Support. But in the meantime...
