Because Gmail is doing user-agent sniffing and only offering that functionality to Firefox (and they did that partially because Camino < 0.9 did not have the rich text editor and there's a nasty Core bug that breaks the ability to tell if a browser has the rich text editor or not....). Camino 0.9 and 1.0 alphas all ship with the rich text editor, thanks to Ludovic's great work last winter.
If you want Gmail to offer that functionality to Camino, I urge you to join other Camino-using Gmail account-holders and send Gmail feedback. There's a Tech Evangelism bug filed <https://bugzilla.mozilla.org/show_bug.cgi?id=291000>, but it's going to take more than that....
And maybe Mike can put in a good word this week when he's out in CA "learning how not to be evil" :-)
