My father was the presiding judge in a case involving a man charged with tax evasion. As the defendant stood before him alone, Dad asked if he had counsel. Looking toward the ceiling, the man replied, "Jesus Christ is my counselor and defender." My father nodded slowly while framing his next question, which was, "Do you have local counsel?"

Desserts:
Orange-Coconut Chess Pie

from To Market, To Market... 
A Collection of Kentucky Recipes


INGREDIENTS:
1 unbaked pie shell (9-inch)
6 Tablespoons melted butter
1-1/2 cups sugar
3 eggs, well-beaten
1/4 cup orange juice
1 cup frozen coconut
TO PREPARE:
 
1.  Combine butter, sugar, eggs, orange juice, and coconut.
2.  Pour into pie shell and bake at 350 degrees until done, 35 to 45 minutes.  Serve warm.

YIELDS:  1 pie (9-inch)
