You replace the anti-freeze on a regular basis to replace the corrosion 
inhibitors that it contains, not the anti-freeze constituent itself. 
People who do not renew anti-freeze run the risk of accelerated 
corrosion to engine internals and head gaskets etc. So, in that sense, 
you are living on borrowed time ;-)
Don't forget that a modern engine is a real mix of metals (aluminium 
cylinder head, cast iron block etc etc) so the risk from electrolytic 
corrosion is already enhanced, hence the need for corrosion inhibitors 
in good condition.
