There has been a series of gas (with unused electric option also) on a yacht I have a share in, and much tilting occurs in rough seas. The fridge continues working and is less prone to seasickness than most of the crew. I suspect you can disregard tilting as a valid reason for not using a gas fridge on a narrowboat.
It is not practical to have an exhaust vent in the side of the yacht, so the fumes, which are pretty insignificant, pass into the rather well ventilated cabin, from whence comes the combustion air. The amount of gas consumed is small, although the fridge can freeze the milk if turned up too much. I do not leave it running at night, as the small amount of carbon monoxide emitted tends to give me a headache by morning, although I am somewhat sensitive to carbon monoxide.
