Steven you must define keep_release and use a callback:

set :keep_releases, 2
after "deploy:update", "deploy:cleanup"

Some time ago, Jamis explained this decision for not do it by default 
but I don't remember (search in archive). Maybe because a delete action 
can be dangerous or not desired.
