Why it's blowing up isn't because of ssh
set :deploy_to, '/var/www/#{application}'
set :current, '#{deploy_to}/current'
Your quoting of strings is incorrect.
Using single quotes creates a non-interpolated string.
It's setting the variable to that literal string.
Use double-quotes instead.
