The Darling project <https://www.darlinghq.org/> looks like a good starting 
point (though it appears they've been focusing more on Cocoa than Carbon).

I've been reimplementing Mac OS APIs (some of which remain in Carbon) starting 
at the beginning: <https://www.v68k.org/advanced-mac-substitute/>.  It's able 
to run some 68K applications.

Ah, so I'm not the only one doggedly[1] sticking with QuickTime Player 7. :-)
