Why do you do such things? If you want to know the current document's  
encoding then look at the (default) mode-line. C-u C-x = somewhere in  
this document will open a new buffer explaining this as well among  
other things.

Did you try the same procedure with another Carbon application? Or  
another Universal Binary?
