Filippo, AFAIR, you can switch from PDF-mode, which creates PDFs even  
if you call LaTeX command, to normal mode, which creates DVIs.

Remember that you can better control AUCTeX with custom routines like  
this guy did: http://www.guit.sssup.it/downloads/corsi/altro/ 
emacs_egv.txt
