Launch them as
/Applications/Carbon\ Emacs.app/Contents/MacOS/Emacs --title "Nº 1" &
/Applications/Carbon\ Emacs.app/Contents/MacOS/Emacs --title "Nr 2" &
You can give each one a file to load, for example to execute some
Emacs Lisp or to set a particular and unique session/desktop
environment ...
