Mat, Those tutorials were written long ago, for a very old version of Caret. Instead, go to "http://brainvis.wustl.edu/wiki/index.php/Caret:Documentation " and download the tutorial "Caret 5.5 Tutorial - Segmentation, Flattening, and Registration". This tutorial contains a section on surface flattening.
