The status bar in the bottom row of the main caret window shows how the mouse 
mode changes depending on your mode.  When you cut, dragging with the left 
mouse buton draws the cut.  I think shift-clicking terminates the cut, but it 
has been so long since I have done this, I can't recall for sure.

But before you resort to these measures, consider the Surface; Sections menu.  
You can select specific ranges of sagittal, coronal, and axial slabs (thickness 
you specify).  Coronal 1mm slices are provided by default, though you might try 
sagittal ones.

Play around with sections and see if it helps.  This is just display and not 
actually editing the surface in any way, like way cuts would.
