I think I have done that before, and it probably is by enabling the
following:

<AsyncLogger name="org.opensaml" level="debug" additivity="false">
<AppenderRef ref="console"/>
<AppenderRef ref="file"/></AsyncLogger><AsyncLogger name="PROTOCOL_MESSAGE"
level="debug" additivity="false">
<AppenderRef ref="console"/>
<AppenderRef ref="file"/></AsyncLogger>
See if enabling that would allow you to see the logs...
