The most valuable logging comes from setting showSql="true" in your
entityManagerFactory bean:

  <bean id="entityManagerFactory"
    class="org.springframework.orm.jpa.LocalContainerEntityManagerFactoryBean">
    <property name="dataSource" ref="dataSource"/>
    <property name="jpaVendorAdapter">
      <bean 
class="org.springframework.orm.jpa.vendor.HibernateJpaVendorAdapter">
        <property name="generateDdl" value="true"/>
        <property name="showSql" value="true" />
      </bean>
    </property>
    <property name="jpaProperties">
      <props>
        <prop key="hibernate.dialect">${database.dialect}</prop>
        <prop key="hibernate.hbm2ddl.auto">update</prop>
      </props>
    </property>
  </bean>

Output is written to STDOUT of your container, e.g.
$TOMCAT_HOME/logs/catalina.out.
