We just rolled out production with ehCache. We went with 3 CAS nodes in both test and production along with our Cisco ACE load balancer, when we load tested the test environment we were able to achieve around 190 logins per second, and expect a higher number from production. All 3 are linux virtual machines with 8 Gb of ram and 8 virtual cpu's, running tomcat 8 under the jsvc daemon with cas 3.5.2, java heap was set at 3Gb.
