One thing I found that can give a sense of the number of deployments is a 
Google search like one of the following:

  allinurl: https "cas/login" site:*.edu

or just

  allinurl: https "cas/login"

which somewhat searches for any CAS primary login pages that have been indexed. 
You can change the *.edu to *.com and see what you get.

This isn't perfect by any means, because:

  - there are pages with all of those strings in the URL that aren't CAS login 
pages
  - corporate login pages likely are often behind a firewall/VPN and not 
"findable" by Google
  - some .com links you'll find may be a cloud service where the CAS login 
links are actually pointing back to institutional CAS services

But it still helps give a sense of deployments.
