It's really strange I can't get either to work.

I have test data with all fields as 'Test'. When I search for 'Test' I get
results, but when I search for 'Te' I get nothing. I've tried using both
ways described below.

That's the correct approach.

But, for simple cases as that, you might want to use:

return (nCustomer[]) FindAll(
  typeof(nCustomer),
  Expression.Like("FirstNames", sFirstName, MatchMode.Anywhere)
);
