Sure.  There are two paths you can choose.
1) Create a XML Schema and have the SourceGenerator generate
the .java for you.  The generated code will be able to churn out this xml.
You can use a 'binding file' to tweak the code generation.

2) Create the java classes yourself, then create mapping file
that describes which java fields get mapped to which xml elements.
