How to remove objects from one side of the many to many relationships.

I have, let's say, subcribers and services and they are in many-to-many 
relationship.

At one moment I get list of new services for a subscriber. I need to remove the 
old ones and add new ones.
How to do this properly?

Also, in the list of new services, there can be some/none of the old services.


I've tried to do this all in one transaction, but this doesn't seem to be the 
right way. 

Has one did this successfully before?
