Carl, I think I have seen some posts that say you can replace the packing while in the water but it seems to me you would get water flow around the shaft. Catalina's manual indicates you can do this in the water but suggests keeping a supply of rags to slow the flow of water into the boat. I've never tried it in the water. If I have to replace packing, I plan on doing in in the yard after the boat is hauled for the winter.
Suggest your friend tighten the packing nut, that should cut down the leakage. The aft nut, small or thin one is the jam or lock nut. Loosen it by turning it away from you if you are working from the quarter berth while holding the larger forward packing nut. when the lock nut is loose, tighten the packing nut by turning it away from you. You want to have 1 to 4 drops of water per minute. Then, holding the packing nut with a wrench, tighten the lock nut to hold the packing nut in place. Its easier to work down in there if you remove both the access door and frame.
