The stack type of class-map lets you define the protocol stack, e.g TCP, while the access control type of class-map lets you define the actual traffic e.g. Telnet traffic containing the string "ABCDEfgh"
The match field is available under both class-maps so that you can tell the router which field in the protocol stack and later in the actual traffic to match traffic on. Yes, you're right about the sizes. Size 1 = 8 bits or 1 byte, size 2 = 16 bits or 2 bytes etc. At least thats the way I've always understood it. Others on the forum can expand on this.
