Interesting thread! This pushed me to test as well (with a 7921G). My results were slightly different from what you state, Jason. I enabled CAC for Voice only. With the WLAN QoS set to anything other than platinum, the 7921G can't call my 7962G (network busy); however, it has no trouble registering to CME. And then setting QoS to platinum allows calls.
Adding video CAC doesn't change anything.
