You should have time before v3.  It hasn't even been announced yet.  So who
knows when that will actually arrive.  Though the tricky part about getting
3 attempts in is that at the moment, labs are booked out a ways.  So the
wait time between attempts will be high unless something changes.

In terms of CLI vs GUI in the WLC, you will need to know some CLI.  But I
wouldn't make it your focus.  You absolutely need to know enough to get the
WLC up and running on the network (ports, interfaces, and LAG) as well as
the CLI-only configs.  Outside of that, it's whatever method you find that
you are the most comfortable with.

A 3500 with a vWLC is better than nothing.  But it is very limiting.  You
are on the wrong code, limited to FlexConnect mode, and cannot interact
with WCS.  Ideally you can pick up some real equipment or use rack rentals.

 Just search for "Building a home lab for the Wireless CCIE" and you should
find it.  Though if you are worried about version 3 on the horizon, the
safest play is to do what you can on any personal lab that you can build
and supplement with rack rentals when your own lab isn't cutting it.  If
you purchase older controllers or any old APs that may not run the needed
code in version 3 (no idea what code it will be), they will become mostly
worthless.
