I have't read the next one so far, but it's more modern and from one of the
best experts in single particle cryo-EM:
Three-Dimensional Electron Microscopy of Macromolecular Assemblies :
Visualization of Biological Molecules in Their Native State, by Frank,
Joachim, Oxford University Press, USA

I did a rotation in an EM lab and this was the first thing I was given to read; they had several copies. Given that there are only a handful of 3D EM software packages and Frank wrote one of the most popular ones, this is probably a good place to start - it goes into the methods involved in single-molecule 3D reconstruction in a fair amount of detail.
