Actually, we just picked up an older Quadro on Ebay for around $50 and set up stereo on our Linux workstation. It works quite nicely for Coot in stereo. Presumably other stereo-using programs would work equally well.
2. I'm also spoiled in that I would like some sort of dial box thing. I find them convenient to use, though if I could get the same result from switching to a space ball for example, I'd be willing to try.
Dial boxes have been unnecessary for me with Coot, so I haven't looked into this.
