OK...

I’ve noticed since updating to 1.1.09, the cell and symmetry master switch no
longer brings up any symmetry molecules.
I don't see this myself. It could be that the symmetry is rendered as very thin lines - depending on your GTK version and driver settings.
I remember in older versions (I was last most active on COOT 0.9.8) there was
also a symmetry by molecule tab that is now missing as well.
Yes. It was too esoteric and intricately written with old-style GTK to be deemed necessary for 1 and 1.1. It will come back at some stage.
Am I missing a setting or is there another workaround this?

We need to first be sure the problem is not merely thin symmetry.

From a fresh start, Calculate -> Load Tutorial Model and Data then delete the maps, Then flip on the Symmetry Master switch. You should see a few greyish symmetry bonds appear, more if you increase the radius to 30 or so.
