Try "yum --help" and "man yum" which have a lot of info. Also the CentOS docs on http://www.centos.org/docs/ has yum docs. So if you for just install CentOS 4.7 from the ServerCD and do # yum check-update it will give you a list of packages to be updated, which you can do by # yum update and then say yes or no.
