By  node do you mean physical server or a running OSD instance (so could have 
multiple OSDs running on a single server, each with their own drive)?

AFAIK there is no rule of thumb. I would dimension like this:
if you have a very small cluster (3 nodes) use 3 mon's.
if you have a larger cluster (30 nodes) use 5 mon's if you have a huge cluster 
(500 nodes) use 7 mon's.
