Succotash is a stewed mixture of corn, lima beans, and tomatoes.  There are
regional variations, but they are all wholesome Southern vegetable side
dishes.  Made correctly, succotash is delicious; made incorrectly, you have
to withhold dessert from the youngsters to get them to eat it.

I have a recipe for making it from entirely fresh ingredients, if you'd like
it, but it takes a couple of hours to prepare it that way.  You have to
shuck your own lima beans; shuck and cut the corn from the cob; peel, seed,
and cut the tomatoes, and to make it just right you should stew it in fresh
chicken stock, which in itself takes a few hours to make correctly.  The
results are well worth the time, if you like the clean taste of freshly
cooked vegetables.

I think the best part about making fresh succotash is getting your kids to
sit with you and help with the preparation and talk about stuff that's going
on in their lives.  We sure gave up a whole lot when we stopped eating
home-cooked meals as families.

Gel-- what's the current state of family life like in Trinidad?  I have this
vision of close-knit families as the rule rather than the exception, eating
together, church, etc.  Is it like that, or am I imagining things?  Got any
pictures?
